From Udon Thani to New York City, and the Heart of Thai Cuisine.

Growing up in the rural town of Udon Thani, in northeast Thailand, Chef Amita Pookaw’s childhood was deeply intertwined with the traditions of Thai cooking. Raised by her grandmother while her parents worked the farmland, she was surrounded by the rich aromas and vibrant flavors of homemade dishes crafted from the fresh, natural ingredients their land provided. These early experiences planted the seeds of her culinary passion, but it was just the beginning of a journey that would take her far beyond her family’s kitchen.

As she entered adulthood, Chef Amita’s curiosity and love for food spurred her to travel across Thailand, from small villages to bustling cities, immersing herself in the diverse culinary traditions of her country. She learned not only the techniques and ingredients that define each region’s unique flavors but also the profound role that food plays in bringing people together. Whether in a busy market or a quiet, family-run eatery, she saw how sharing a meal could create lasting memories, forge relationships, and communicate warmth and love, transcending cultural and social barriers.

It was this understanding of food’s power to connect people that inspired Chef Amita to take her culinary journey to the next level. Dreaming of a space where she could share her passion for Thai cuisine and create a community through food, she eventually set her sights on New York City. The vibrant, multicultural metropolis seemed the perfect place to bring her vision to life. New York offered not only a chance to share the authentic flavors of Thailand but also a platform to build connections and tell her story through every dish she created.

Owning a restaurant had been one of Chef Amita’s lifelong dreams, and in New York, she finally realized it with Khaosan. Her restaurant reflects everything she’s learned—from her childhood in Udon Thani, to her travels across Thailand, and now to her thriving career in New York City. Khaosan is more than just a place to eat; it’s a reflection of her journey, her heritage, and her belief in the power of food to unite us all.

Chef Amita’s approach to cooking remains deeply rooted in her upbringing. She has an extraordinary ability to transform simple, local ingredients into something remarkable. Drawing on her rural roots, where she learned to make the most of what nature provided, she continues to work with fresh, locally sourced ingredients—whether it’s aromatic herbs, fine spices, or organic produce from nearby farmers. Every dish she creates is a celebration of nature’s bounty, elevated by her creativity and passion.

Through Khaosan, Chef Amita invites guests to embark on a culinary adventure that reflects her life’s journey. Each dish tells a story, offering a taste of Thailand’s rich traditions and a glimpse into the heart of a chef who believes in the power of food to create connections.
